In reply to N. It was my first time cooking kidneys and I’ve heard that it’s easy to overcook them. When I took them out of the pan they were still a bit raw inside, so you maybe want to reduce that time by a minute or two if you are going to throw them into the sauce later on. In case you already tried the recipe, I hope you liked it :)

I just made another recipe using wine. It was too long a cooking time and was absolutely awful. It went directly into the garbage. I’m looking forward to trying this creamy recipe which has a more reasonable cooking time. We usually just cook the kidneys in sauteed onions for a few minutes leaving them a bit raw inside – much better undercooked.
