This baked eggs recipe with avocado and crispy fried streaky bacon is super tasty and prepared easily within 30 minutes. It makes a great breakfast as well as a nice main or side dish and can easily be cooked in large amounts as long as everything fits on your baking tray.

- 150 gram streaky bacon cut into bits
- 1 avocado sliced - cut lengthwise
- 15 eggs

Instructions
- First, preheat your oven to about 180°C (350°F) and fry the bacon in a pan on low-medium heat for 5-10 minutes until it is crispy
- Then, place the avocado slices evenly on a baking tray
- Now, add the crispy bacon bits, drop the eggs on top of everything and season it with salt & pepper
- Finally, put the baking tray into the oven for 10-15 minutes, until the eggs are done
Recipe Notes
Basically, you can use as much eggs, avocado and bacon as you want.
I like to add some low carb ketchup and mayonnaise on the side too, but it is not mandatory.
You may also spice this dish up by adding dried chili flakes.
If you want the meal to be more saturating you could also add some shredded cheese before putting the baking tray into the oven. Gouda or cheddar cheese would fit pretty well.
