Instructions
  1. First, preheat your oven to 170°C (340°F)
  2. Put the beef liver on a cutting board and beat the pieces with a meat hammer to make them flatter. You don't need to flip them, it is enough if you just hit from one side. Also, make sure that you don't hit too hard as the meat already is pretty tender and you don't want to create holes

  3. Next, add the seasonings, also from one side only - this will be the inside. Then, spread the spinach (e.g. with a spoon) on the pieces

  4. Afterwards, put the feta cheese on top. Place it centered and only on one half of the liver pieces. This way it is easier to roll them up

  5. Now, roll the liver up. Start on the side with the cheese to make sure it is in the center of the roulade

  6. After that, create a bacon weave of 4-5 slices on top of each roulade. Lift each one up with one hand while wrapping the bacon around the bottom with the other hand

  7. If you have small packets, wrap another layer of bacon around them to make sure everything is nicely wrapped without any big gaps and place the roulades on a baking tray with parchment paper

  8. Finally, put the baking tray into the oven and bake the roulades for 25-30 minutes until the bacon becomes brown and crispy

You probably could skip the meat hammer step if your beef liver pieces already are pretty flat (about 0.5cm / 0.2in of thickness).

If they are way too thick, lay them on the cutting board.
Then, cut from one side with a sharp knife until you nearly reached the end of the other side.
Now, you can simply fold out the pieces and have thinner ones.

At step 3 I used frozen spinach which I thawed & pre-cooked in the microwave for about 3 minutes while beating up the liver:

Of course, you may also use different stuffings.

One idea that I've had was pizza stuffing with tomato paste or fresh tomatoes, mozzarella cheese & Italian / Mediterranean herbs (oregano, rosemary, thyme). Maybe with some additional ground beef, pepperoni, fried chicken or even pulled pork.

Instructions
  1. First, melt the coconut oil in an oven-suitable pan at low-medium heat on the hob and preheat your oven to 170°C
  2. Fry onion in coconut oil for about 5 minutes, until golden brown
  3. Next, add avocado to the pan and fry for just about 2-3 minutes while stiring

  4. Then, add the spinach and also stir-fry it for 2-3 minutes

  5. Pour the cream into the pan, add all seasonings and mix everything
  6. Now, drop the eggs on top, stir everything for 1 minute and finally, put the pan into the oven for 15-20 minutes, until everything is solid

Recipe Notes

You can check if the omelette is done by poking into it with a chopstick.
If you pull out the chopstick and it is clean your omelette is done. If there are moist residues from the eggs on the chopstick the omelette needs a few more minutes.

I used frozen spinach that I thawed in the microwave before adding it to the pan.
If you use fresh spinach you don't necessarily need to precook it, but give it a few more minutes of frying in the pan.

I like to eat this dish with some cream cheese on the side.

You may also add shredded cheese on top right before you put the pan into the oven.

  1. First, preheat the oven to about 180°C
  2. Then, put the avocado and onions into a food processor and mince them for about 1 minute
  3. Add the eggs, coconut oil and seasonings and give them a few pulses to mix everything
  4. Now, add the ground beef and turn on the food processor for another 1-2 minutes until you have a homogeneous mixture
  5. Put a sheet of tin foil on a baking tray and evenly spread about two thirds of the mixture on the foil
  6. Next, add the stuffings and the rest of your avocado ground beef mixture on top
  7. Finally, roll everything up using the tin foil and put it into the oven for about 1 hour
Recipe Notes

If you don't have a food processor,  just squash the avocado with a fork instead and cut the onions into dices. Then, thoroughly mix these in a bowl with the other ingredients and seasonings for the beef mixture by using your hands or a mixer with dough hooks.
