This stuffed meatloaf with pulled pork & cheese is a real meat monster. It takes a few hours of cooking time, but the waiting is definitely worth it. In addition, this meatloaf is delicious, extremely satiating and perfectly suitable for a ketogenic diet.
First, use the pork shoulder to make pulled pork. I used a stewing pan in which I seared the meat, then added some water and put the pan into the oven for about 6 hours, with the lid on. When the pork is about to be done, start to prepare the meat mixture. For that, put the ground beef, eggs & all seasonings into a bowl and mix everything thoroughly until it is a homogeneous mixture. You may use a food processor or simply mix it using your hands
In the meantime, preheat your oven to 150°C (300°F)
Take the pork out of the stewing pan / pot, remove all bones, pull the meat apart and keep it on a plate or in a bowl. Then, put a piece of cling film onto a cutting board. This helps to wrap the meatloaf up
Now, spread the meat mixture on the cling film, as evenly as possible
Afterwards, add the stuffings on top. Spread the pulled pork evenly and the cheese only on one half
Then, use the cling film to wrap everything up. Start on the cheese side first to make sure that the cheese will be completely wrapped up and can't leak out
When it is all wrapped up, put the loaf onto a baking tray with parchment paper and carefully remove the cling film
Finally, bake the meatloaf in the oven for about 1 hour

Of course, you may also use any other cheese you prefer, like mozzarella, parmesan or cheddar.
The pulled pork turns out great if you use pork neck instead of shoulder, too. It may be even better as pork neck usually is a little fattier then shoulder and therefore juicier & more flavorful.
These keto scotch eggs are pretty easy to make with only 2 main ingredients: eggs & ground beef. They are low carb friendly, satiating and taste delicious, especially when prepared in a deep fryer.
First, poke 5 of the eggs and cook them in an egg cooker for about 2 minutes. Of course, you can do that in a pot with boiling water, too. Take the eggs right out of the fridge, then put them into the egg cooker or boiling water. You only want the very outer egg white layer to become solid
Then, chill the eggs under running cold water or -even better- put them in a bowl with water & ice. Do that for 1-2 minutes to make sure the eggs are completely cooled down
Now, put the eggs into your freezer for 2-3 hours until they are completely frozen
When the eggs are frozen, prepare the ground beef mixture. For that, put the ground beef into a bowl, add 1 egg & all seasonings. Next, mix it thoroughly with your hands or a hand mixer with dough hooks
Now, take the eggs out of the freezer and carefully peel them
Afterwards, take about 1/5 of the ground beef mixture, put it onto a cutting board and press it flat to a burger patty shape. If it sticks to the cutting board use a spatula to slide between the board & patty and detach it
Next, place 1 egg centered onto the patty, then wrap it by pulling the beef mixture up from the sides. Make sure that you don't leave any big gaps
Repeat these steps for each egg. Do them fast as the eggs are thawing already, but still be careful so you won't break them
Now, preheat a pan with your preferred fat for frying to low-medium heat. Use a huge amount of fat (e.g. lard, beef towel, coconut oil) to prevent sticking - it's even better to fill up a pot with fat or simply use a deep fryer
Finally, fry the balls evenly for 15-20 minutes until the ground beef is brown and slightly crispy. If you use the deep fry method at medium-high heat it only takes about 5 minutes

The additional egg in the ground beef mixture helps to hold everything together. I didn't do this here, but highly recommend it as the result will be better that way.
Also, deep frying is the best method to cook these, because they get fried more evenly and are done faster.
Serve with any side dish you like - e.g. oven baked broccoli, fried string beans or cauliflower mash. I simply added some low carb ketchup & mayo.
Tip: If you want to go full pro add a layer of "breading" around the ground beef. You could use crunched pork rinds / crispy bacon bits for that.
Easy Liver Burger - With Beef Liver & Chicken Hearts
These beef liver burger are easily prepared within only 30 minutes. In addition, they taste delicious and are packed with valuable and essential nutrients due to the organ meats containing multiple vitamins as well as iron, copper and choline which is important for brain development and liver function.
First, put the beef liver, chicken hearts & all seasonings into your food processor
Then, mince everything for about 30 seconds, add the egg and mince again for a few seconds until everything is mixed. To give the burgers a better consistency you may also add 1-2 tablespoons of coconut / almond flour or psyllium husk powder at this step
Now, add some coconut oil or your preferred fat for frying to a pan and heat it up to low-medium heat. A non-stick pan would be perfect. In case you don't have one make sure to use enough fat to prevent sticking
Next, use a spoon to put blobs of the meat mixture -with about 0.8 centimeters (about 1/3 inch) of thickness- into the pan
Let the burgers fry slowly, for about 10 minutes, before flipping to make sure that they don't fall apart. It is easiest to wait until they start to become solid and coloured on their top's edges
After flipping, fry for another 5-10 minutes until the burgers have reached your desired color. I like them to be more on the dark brown side
