Seared Beef Liver With Brussel Sprouts & Eggs
Instructions
  1. First, melt the coconut oil in a pan on medium-high heat and cut the beef liver into very thin slices

  2. Now, add the liver to the pan and sear it for about 3 minutes on each side

  3. In the meantime, start to boil the eggs in a pot for about 7 minutes
  4. When the liver is done, add the cooked brussel sprouts & all seasonings to the pan and fry everything for 7-10 minutes on low-medium heat while stirring occasionally
  5. Finally, peel the eggs, cut them in half, place everything on the plate and sprinkle some salt over the eggs
Recipe Notes

I used frozen brussel sprouts and thawed them in the microwave for 10 minutes, while the liver and eggs were cooking.
You could also use fresh ones and cook them in advance to preparing the liver.

This is one of my experiments and it turned out pretty amazing! It is kind of a casserole with eggs, avocado, cheese and brussel sprouts.

Instructions
  1. Preheat oven to 160°C
  2. Cook brussel sprouts until they are half-done and cut them in half 
  3. Hollow out avocado and put it into a bowl, then squish it with a fork until it is completely mashed 
  4. Add the eggs & seasonings and whisk everything with the fork 
  5. Put a layer of brussel sprouts into a baking dish

  6. Pour in the avocado-egg mixture until all the gaps are filled

  7. Add a layer of the shredded cheese

  8. Then, cover it with the sliced cheddar 
  9. Repeat steps 5-8 for each layer

  10. Put it into the oven 
  11. After about 35 minutes, turn the heat up to 200°C to get a nice cheese crust

  1. Preheat oven to 190°C and put brussel sprouts on a baking tray
  2. When the oven is hot, put the baking tray in for 15 minutes
  3. In the meanwhile, after about 10 minutes, season the pork chop with salt, pepper and cumin and start to fry it at medium heat
  4. Another 10 minutes later, take out the baking tray, season the brussel sprouts with salt, pepper and grated nutmeg and scatter the cheese on top
  5. Put it back in the oven for another 5-10 minutes, until some of the cheese becomes crusty

This recipe works pretty well with cauliflower or broccoli, too.
