Asparagus Cream Sauce
This asparagus cream sauce is a clever way to reuse the stringy parts from your recently cooked green asparagus. Works with the skin of white asparagus as well. Stop wasting the nutritious asparagus leftovers, because most of the healthy stuff is directly under the skin.

Instructions
  1. Preheat a pan with the lard to medium heat and add the asparagus parts. Let them fry for about 5 minutes before adding the butter
  2. Now, add the water and cook everything for another 5-10 minutes
  3. Take out the asparagus parts with a slotted ladle and add the cream plus seasonings
  4. Finally, let everything simmer for 5-10 more minutes while stiring occasionally, until it is reduced to a sauce with your desired thickness
Recipe Notes

This sauce goes very well with the chicken heart tuna meatballs which I made simultaneously.

Of course, you could also simply use it to go with your asparagus or other types of vegetables, like broccoli, cauliflower or mushrooms.

Instructions
Marinated Pork
  1. First, you need to prepare the marinated pork about 12-24 hours before you want to cook it. Optimally, you do this the previous evening if possible
  2. Put the pork chops into a zip lock bag or a container and add all the ingredients for the marinade.

  3. Massage everything into the meat and store it in the fridge for 12-24 hours. Always close your zip lock bag or container thoroughly before putting it into the fridge
  4. When this waiting period is over, preheat your pan with some lard or coconut oil in it to medium heat
  5. Finally, fry your pork chops for 5-7 minutes on each side until they get a nice brown color
Buttered Vegetables
  1. Before you put the pork chops into the pan, thaw the vegetables in the microwave or just throw them into a pot with just about 50 milliliter of water
  2. Then, add the butter and seasonings, put the lid on and let it cook for about 15 minutes at low-medium heat while stiring occasionally
  3. Now, the pork chops and vegetables should be both finished and you may pour some of the grease from the pan over the vegetables
Recipe Notes

Never pour raw, leftover marinade over the cooked meat.

If you want to use the leftover marinade, make sure to boil it up to kill all harmful bacteria.

Don't marinate in aluminum containers or foil, because a chemical reaction could spoil the food.

The best way to marinate the meat is using the zip lock bag in order for it to be evenly surrounded by the marinade.

For 500 gram of meat, you need about half a cup of marinade.

Beef Goulash With Sausages
Instructions
  1. First, sear the beef in a big pot while cutting the sausages into slices
  2. Next, take out the beef, put it aside and fry the sausages in the same pot until they start to become crispy
  3. Now, take out the sausages, fry the onions and add the garlic to fry for 2-3 minutes, too
  4. When the onions and garlic become golden brown, add the peppers
  5. Sautée them for a minute, before adding all the fried meat again
  6. Add the remaining ingredients (canned tomatoes, tomato paste, butter, water) and all seasonings, too
  7. Finally, let it cook for 4-5 hours at low heat with the lid on while stiring occasionally.
Recipe Notes

Attention: To prevent the goulash from scorching, don't forget stiring it or adding some water from time to time.

The goulash is perfect when the peppers, tomatoes and onions all dissolved into one mixture and when the meat is soft.

It tastes best after 1-2 days in the fridge! In addition, I like to eat it with some cream cheese or zoodles.
