This keto gyro is simple to prepare and brings the typical, delicious greek flavor & smell into your kitchen. It's satiating and suitable for keto & low carb diets, especially low carb high protein or carnivorous ones. All it needs is a nice piece of fresh pork, seasonings and some fat for marinading & frying the meat.

Instructions
First, put the piece of pork ham into the freezer for 1.5 to 2 hours. You want it to be frozen, but still cuttable. This makes the next step very easy
When the meat is stiff, take it out of the freezer and cut it into thin slices
After that, put the sliced meat into a big bowl & add all seasonings. Just spread them on top of the meat
Now, melt the lard or coconut oil in the microwave for 20-30 seconds. If you are using heatable olive oil you don't need to melt it, of course.
Then, pour the fat onto the meat and immediately start to mix everything thoroughly
Afterwards, let the seasoned meat stand for about 10-15 minutes to give it a chance to soak in some seasoning. The longer you let it stand the better
Next, preheat a pan (with your preferred fat for frying) to low-medium heat. Add the meat and let it fry for about 5-10 minutes with a lid on
Finally, remove the lid and fry for another 5-10 minutes while stirring occasionally until you have some crispy bits and roasting flavors (browned meat). Take care that you don't fry it for too long as fresh pork ham is pretty tender and can dry out fast
Recipe Notes
To make it even better, you may prepare & marinade the meat in the morning or one day in advance and let it soak in the seasonings for a longer period of time. Simply let it stand for 1-2 hours or longer instead of 10-15 minutes. If you prepare it a day in advance, put the bowl into your fridge and cover it with cling film.
The seasonings are amazing for marinading pork chops or spice up some ground beef, too.
In addition, you could use pork loin instead of ham or try it with other cuts.
Serve with any keto friendly side dish you like, e.g. salad, fried / baked vegetables, some eggs or simply a low carb condiment.
Surf and Turf in meatball form? Make it happen with these shrimp stuffed meatballs that I created. They are a perfect low carb alternative to usual shrimp balls, taste delicious and go well with fried vegetables or some avocado on the side.
First, put the shrimps into a pan on low-medium heat and (if frozen) let them thaw for 2-3 minutes before adding the butter. If you use fresh shrimps add the butter and shrimps simultaneously
Let the shrimps cook in the butter for about 5 minutes, then add all remaining ingredients for the shrimps (lemon juice, soy sauce, sichuan pepper, salt, pepper & a pinch of garlic powder)
Now, stir everything and cook it on low heat for about 10 minutes while stirring occasionally. Cook until the water from the shrimps and butter is evaporated and the shrimps get a light golden brown color
Meatballs
While the shrimps are cooking, prepare the meatball mixture. Add the ground beef, eggs & seasonings to a bowl and mix them thoroughly with your hands or a hand mixer with dough hooks
When you have a homogeneous mixture, add the onions and mix everything once more
Now, split the mixture into 4-5 parts, put them onto a plate or breadboard and gently press them into -about 3/4 cm (or 1/3 inch) thick- patties
When the shrimps are finished, place them in the middle of the beef patties. If you like it a bit spicier add some of the sichuan pepper from the pan, too
Now, wrap the patties' edges to the top until everything is closed and use your hands to gently press them into a ball shape
Finally, fry the meatballs evenly for about 15 minutes on low-medium heat first and 3-5 minutes on medium-high heat afterwards in order to get a nice brown color and some roasting flavor
Recipe Notes
For a dairy free alternative, just replace the butter with coconut oil or lard.
I also added some mayonnaise and an avocado that I sprinkled with some salt & pepper on the side.
If you want a great sauce to go with your meatballs simply add about 150 gram cream to the pan with the remaining grease after frying and taking the meatballs out.
Then, let the cream cook on medium heat while stirring until it is reduced to your desired thickness. This works great with coconut milk/cream, too.
In case you don't want to use cream, slice 2-3 onions and cook them on low-medium heat in the remaining grease until they start to dissolve and everything thickens to a sauce.
This recipe for lemon garlic shrimps with bratwurst and eggs is finished within only 20 minutes. It makes a very nutritious meal with a lot of healthy fats, vitamins and high quality proteins.
Please start to prepare the bratwurst sausages first.
Then, melt the coconut oil in a second pan on low-medium heat
Next, add the onion slices and fry them for about 5 minutes until they become golden brown
Add dried chillies and fry for another 2-3 minutes before adding the shrimps
Finally, fry the shrimps for about 10 minutes, add lemon juice, garlic powder and a pinch of pepper, stir everything and cook it for 2 more minutes until most of the water is dissolved
Bratwurst and Eggs
First, melt coconut oil in a pan on low heat
Then, put the bratwurst sausages into the pan and fry them on each side for about 10 minutes with a lid on
After about 10 minutes -while the sausages and shrimps are frying- boil the eggs in a pot with water or with an egg boiler. When they are done, peel them and sprinkle some salt on top
