This stuffed meatloaf with pulled pork & cheese is a real meat monster. It takes a few hours of cooking time, but the waiting is definitely worth it. In addition, this meatloaf is delicious, extremely satiating and perfectly suitable for a ketogenic diet.
First, use the pork shoulder to make pulled pork. I used a stewing pan in which I seared the meat, then added some water and put the pan into the oven for about 6 hours, with the lid on. When the pork is about to be done, start to prepare the meat mixture. For that, put the ground beef, eggs & all seasonings into a bowl and mix everything thoroughly until it is a homogeneous mixture. You may use a food processor or simply mix it using your hands
In the meantime, preheat your oven to 150°C (300°F)
Take the pork out of the stewing pan / pot, remove all bones, pull the meat apart and keep it on a plate or in a bowl. Then, put a piece of cling film onto a cutting board. This helps to wrap the meatloaf up
Now, spread the meat mixture on the cling film, as evenly as possible
Afterwards, add the stuffings on top. Spread the pulled pork evenly and the cheese only on one half
Then, use the cling film to wrap everything up. Start on the cheese side first to make sure that the cheese will be completely wrapped up and can't leak out
When it is all wrapped up, put the loaf onto a baking tray with parchment paper and carefully remove the cling film
Finally, bake the meatloaf in the oven for about 1 hour

Of course, you may also use any other cheese you prefer, like mozzarella, parmesan or cheddar.
The pulled pork turns out great if you use pork neck instead of shoulder, too. It may be even better as pork neck usually is a little fattier then shoulder and therefore juicier & more flavorful.
Pan Fried Pulled Pork - Slow Roasted Pork Shoulder
This pan fried pulled pork recipe for slow roasted pork shoulder is very delicious, saturating and easy to prepare, too. You only need a piece of pork shoulder, oil & butter for frying, some seasonings and about an hour of passive cooking time. The side dish to that can be as simple as boiled eggs or some vegetables.
First, put the coconut oil into a pan on medium-high heat and when it is hot add the pork shoulder
Season the meat with salt, pepper, cumin and coriander on the upwards facing side while searing it on the other for 3-5 minutes.
Then, flip it and add the seasonings again while searing the other side, also for about 3-5 minutes until it gets a medium brown color
Now, set your plate to low heat, add the butter to the pan and put a lid on top
Finally, let the pork shoulder fry for about 60 minutes with the lid on and flip it about each 15 minutes.
It is perfect, when the meat falls from the bone and you can easily pull the meat fibers apart with a fork
Eggs
While the pork shoulder is slowly frying and has about 10 minutes left of cooking time, start to prepare the eggs.
Simply put them into a pot with boiling water and cook them for about 5 minutes, alternatively use your egg cooker
When they are done, peel the eggs, place them on a plate, cut them in half and sprinkle some salt & pepper on top

Pro Tip: For some awesome vegetables on the side, cook them in a pot or the microwave until they are nearly done. Put the finished meat on a plate and cover it with aluminium foil to keep it warm. Then, shortly fry the vegetables on medium-high heat in the remaining butter and pork grease in the pan.
This slow roasted pork is super delicious and juicy. It nearly falls apart on its own and melts on the tongue like butter.
The preparation is super easy and doesn't need much effort. Only the cooking takes a while.
