Stuffed Peppers - Braised In Coconut Milk
These peppers are stuffed with ground beef & shredded cheddar cheese and braised in coconut milk.
I made up this recipe myself and really like the composition of coconut milk and curry.
Instructions
Put ground beef, cheese & egg in a mid-sized bowl and add salt, pepper, paprika, cumin and coriander
Dice one onion. This goes into the bowl, too
Mix everything thoroughly
Cut off the peppers' heads, hollow them out and fill them with the ground beef mixture
Fry them in a braising pan on the beef side first, at mid-high heat for about 5-10 minutes
In the meanwhile, slice the other onion and cut the rest of the peppers into slices. Put them in the pan, when the ground beef is crispy
Flip peppers with the ground beef site now facing the top and let everything fry for 5 minutes
Add all of the seasonings above and the coconut milk
Let it simmer at low-mid heat for 30 minutes
Recipe Notes
If your pan is suitable, you may also just put it into the oven for about 30 minutes at 180°-200°C at the last step.

Creamed Ground Beef - With Cucumber
This is one of my experiments and it tastes way better than I thought initially. The basis is creamed ground beef. Here, I just added a cucumber to fry and some extra cream cheese.
Instructions
Fry ground beef at medium heat for about 10 minutes until it becomes nicely brown and crusty
Put onions in and let it fry for 5 more minutes
Now, the cucumber slices go into the pan and get fried at mid-high heat for 2-4 minutes
Add seasonings, cream cheese and cream. Let it start to cook. Then, turn down the cooking plate to medium heat again
Let it simmer for a few minutes while stiring until the cream cheese is dissolved and the sauce has a thickness you like

Also, try this recipe maybe with cream cheese and Greek style yogurt, that should fit very well, too.

Cheesy Baked Brussel Sprouts & Pork Chop
You don't like brussel sprouts?
Maybe, you just think you don't like them. Try this new recipe and it could change your mind. These cheesy brussel sprouts are super delicious and can be made with any cheese you like. Also, this recipe takes very small effort and can be upscaled for as many people as you wish.
Instructions
Preheat oven to 190°C and put brussel sprouts on a baking tray
When the oven is hot, put the baking tray in for 15 minutes
In the meanwhile, after about 10 minutes, season the pork chop with salt, pepper and cumin and start to fry it at medium heat
Another 10 minutes later, take out the baking tray, season the brussel sprouts with salt, pepper and grated nutmeg and scatter the cheese on top
Put it back in the oven for another 5-10 minutes, until some of the cheese becomes crusty

This recipe works pretty well with cauliflower or broccoli, too.
