Instructions
  1. First, put the broccoli and leeks on a soup plate and cook them in the microwave for about 10 minutes, until they are nearly done
  2. In the meantime, melt coconut oil in a pan on low-medium heat
  3. Then, fry the beef liver for about 5 minutes on each side, until it gets some dark brown color. Season it with some salt, pepper and cumin on one side first and on the other after flipping it
  4. Move beef liver in the pan to a less hot spot on the side and add your precooked vegetables -including their water from the plate
  5. Finally, pour the soy sauce on top of the vegetables and fry them for about 5 minutes while stiring

Instructions
  1. Fry ground beef with your preferred fat in a big pot on medium heat
  2. When it becomes crispy, add the butte and onions, stir everything and fry for about 5 minutes
  3. Then, add the garlic and fry everything for 5 more minutes
  4. Now, add the leeks & water, put the lid on and let it cook for 15 minutes
  5. After that, the remaining ingredients -including seasonings- go into the pot
  6. Finally, stir everything and let the soup cook about 15-20 minutes, without the lid

Basically, you can use as much cheese as you like, take less water or let the soup cook a while longer to make it as thick and creamy as you desire.

  1. Preheat oven to 180°C
  2. Hollow out mushrooms and place them on a baking tray with the open side to the top (keep the stems)
  3. Put ground beef in a mid-sized bowl, add salt, pepper, caraway and cream cheese
  4. Mix everything thoroughly
  5. Then, stuff the mushrooms with the mixture
  6. Melt some ghee in a small microwave-suitable bowl and spread it on top of the mushrooms
  7. Put mushrooms into the oven for about 40 minutes
Creamed leeks
  1. Slice the leftover mushroom stems and fry them at medium heat in a mid-sized pot
  2. After 3 minutes, add onions and fry until they become brown and crispy
  3. Now, add leeks & some water
  4. Let it simmer with the lid on at low-mid heat for 10-15 minutes
  5. Add cream cheese & cream
  6. Season with salt, pepper, grated nutmeg
  7. Stir everything and let it simmer for 5-10 minutes at low-mid heat, this time without lid
