This avocado omelette with spinach & cream is very saturating. It is stuffed with healthy fats and nutrients, easily prepared within 30 minutes. In addition, this is an awesome breakfast and a good dish for preparing in advance and having it for lunch at work.
First, melt the coconut oil in an oven-suitable pan at low-medium heat on the hob and preheat your oven to 170°C
Fry onion in coconut oil for about 5 minutes, until golden brown
Next, add avocado to the pan and fry for just about 2-3 minutes while stiring
Then, add the spinach and also stir-fry it for 2-3 minutes
Pour the cream into the pan, add all seasonings and mix everything
Now, drop the eggs on top, stir everything for 1 minute and finally, put the pan into the oven for 15-20 minutes, until everything is solid

You can check if the omelette is done by poking into it with a chopstick.
If you pull out the chopstick and it is clean your omelette is done. If there are moist residues from the eggs on the chopstick the omelette needs a few more minutes.
I used frozen spinach that I thawed in the microwave before adding it to the pan.
If you use fresh spinach you don't necessarily need to precook it, but give it a few more minutes of frying in the pan.
I like to eat this dish with some cream cheese on the side.
You may also add shredded cheese on top right before you put the pan into the oven.
This recipe with scrambled eggs, chorizo & Mett is prepared effortlessly within 15 minutes. It is nutritious and saturating and works as lunch, dinner or breakfast.
First, cook the broccoli in a pot or in the microwave until it is done. This should take about 15 minutes
While the broccoli is cooking, melt coconut oil in a pan on medium heat and fry the Mett for about 5 minutes, until you have small cooked chunks (similar to fried ground beef)
Next, the sliced chorizo salami goes into the pan and gets fried for 5-7 minutes, until crispy
Drop eggs on top of the fried meat, let them sit for a minute while adding the seasonings, then scramble everything and fry it for 2 more minutes
Finally, place everything on a plate including the broccoli -which should be done by now- and sprinkle some salt over it

Mett is German minced pork meat that contains seasonings and can be eaten raw.
Usually, it is spread on a slice of bread, but to make it keto friendly you may spread Mett on a slice of cheese, cloud bread/bun, keto flatbread or simply fry it.
Of course, this recipe works with ground beef or usual minced pork instead of Mett, too.
Avocado Meatloaf - Stuffed With Spinach And Sheep's Milk Cheese
This avocado meatloaf stuffed with spinach and sheep's milk cheese tastes amazing. It is made with a mixture of avocado and ground beef and an awesome method to add some more extra healthy fat to ground beef which is usually pretty lean. It is very saturating and perfectly suits a ketogenic diet.
Then, put the avocado and onions into a food processor and mince them for about 1 minute
Add the eggs, coconut oil and seasonings and give them a few pulses to mix everything
Now, add the ground beef and turn on the food processor for another 1-2 minutes until you have a homogeneous mixture
Put a sheet of tin foil on a baking tray and evenly spread about two thirds of the mixture on the foil
Next, add the stuffings and the rest of your avocado ground beef mixture on top
Finally, roll everything up using the tin foil and put it into the oven for about 1 hour

If you don't have a food processor, just squash the avocado with a fork instead and cut the onions into dices. Then, thoroughly mix these in a bowl with the other ingredients and seasonings for the beef mixture by using your hands or a mixer with dough hooks.
